Fats are complex organic compound containing carbon,
hydrogen and oxygen. They contain high proportions of carbon and oxygen with
little oxygen.
Fats are solid at a
room temperature while oil are liquid at room temperature. Liquids fats are
called oil.
Fats are not soluble
in water but soluble in solvents like kerosene, ether, chloroform and benzene.
Fats are found in both plants and animals. Oils can be obtained from plants and
Animal fats by the process of heating ( E.g vegetable oils from groundnuts,
coconuts, melon kernel and oil palms fruits}. The oils can be hardened into
forms like butter by cooling, freezing
and hydrogenation.
SOURCES OF FATS AND OIL
The sources of fat are ; groundnuts, melons, butter, palm
oil, cod-liver oil, margarine, soya beans oil, palm kernel oil fatty meat and
fish, coconut oil.
IMPORTANCE OF FATS AND OILS

When fats
and oil are oxidized, they gives a great amount of energy and heat to the body.
They yeid more than
carbohydrates.
2.
Excess fats are stored under the skin and around
some organs like intestine, eyes, gonada, kidneys and heart . These stored fats
help to keep the body warm and protect the vital delicates organs.
3.
They act as insulator to nerves and cell membranes.
4.
It must be noted that too much fats in the body
is detrimental to health, hence the
amount of fats and carbohydrates in the diet should be carefully regulated.
5.
They go into formation of cell membranes.
